First up is Jimmy V’s, a new client of ours who’s signature red and white truck is a must stop if you are in the Seattle area. Jim Valiere faced a tough and unfortunate situation that caused him to lose his previous job. He thought opening a restaurant would be a perfect new venture, as he loved cooking for and serving others. His wife, Lucita, came up with the idea that a mobile operation would be better so that they could serve many of the homeless people around the city. Jim agreed and just like that, Jimmy V’s was born.
You can find the Jimmy V’s Truck in Seattle and the surrounding cities within King County serving a unique and delicious menu. I say unique because they specialize in American, Italian, AND Filipino Fusion dishes. The Filipino Fusion is a big hit amongst customers. The most popular item on the menu is the Philly Cheese Brisket on a fresh Viet Bánh mì bun.
Jim’s advice to new food truck owners would be to make sure your plans are submitted to the state before you start building because things don’t always go as smoothly as you expect them to. Through everything, Jim loves the food truck business and says his favorite things about it are meeting and joking with new people, and hearing them say, "That was delicious".
