For our next client spotlight, we have Lexylicious, an ice cream sandwich truck from the east coast. Alexa Hesse, founder and owner, answered some questions from us below:
How long have you been operating?
3 years, we started summer of 2015
What cities do you serve in?
All around the state of New Jersey!
What type of food do you serve?
We serve custom ice cream sandwiches. We carry lots of fun cookie flavors and classic ice cream flavors. Each of our customers get to choose their cookie, choose their ice cream, then their sandwiches are scooped to order.
What is the most popular item on your menu?
Fruity pebble cookies with vanilla ice cream is a fan fav!
What originally brought you to the food truck business?
It was a total accident. I was making ice cream sandwiches for fun and a friend asked me to make them some. Eventually so many people asked me to make them I started selling them. Someone recommended we try a festival but lugging things in and out was just horrible. We started with a trailer and now we have 3 trucks!
What is your favorite part about running a food truck?
There’s a lot of room for creativity and I have met soo many amazing people. I wouldn’t get to meet as many people if I were in a store. We get exposed to such massive quantities of people because were constantly in new towns, at new festivals, all over the place.
Do you have any tips to somebody starting a new food truck?
Do not get discouraged! We have days that are amazing and we get days that are total fails. It happens in every business but it’s more of a rollercoaster in the food truck business. We have had just about every truck problem you could think of and so many times I am so sick over it but just keep going!
